Also called sweet peppers or capsicums, bell peppers can be eaten either raw or cooked.

Like their close relatives, chilli peppers, and bell peppers are sometimes dried and powdered. In that case, they are referred to as paprika.

They are low in calories and exceptionally rich in vitamin C and other antioxidants, making them an excellent addition to a healthy diet.

When green peppers are harvested earlier before they have a chance to turn yellow, orange, and then red, compared to green bell peppers, the red ones have almost 11 times more beta-carotene and 1.5 times more vitamin C.

Bell peppers come in various colours, such as red, yellow, orange, and green — which are unripe. Other colours included brown, white, lavender, and dark purple all depending on the pepper dew variety.

Green, unripe peppers have a slightly bitter flavour and are not as sweet as fully ripe ones. Red peppers are simply ripened green peppers. Although some variety maintains green colour when fully ripe, however, this is part of the ripening process.

Peppers are very versatile. You can add raw peppers to everything from dips and salads to pasta dishes. You can eat Peppers raw, cooked, roasting, fried, or pickled.

Roasting peppers is very easy to prepare. Cut a small slit near the stems. Grill or broil until blackened. Then let them steam by zipping them in a plastic bag for about 15 minutes before scraping off the skin and removing the stem, core, and seeds. Removing the skin before eating will prevent gas or stomach pain.

Burning Skin Or Eyes

When working with peppers, remember that they can burn your skin and eyes. Wear rubber gloves while you’re handling them, keep your hands away from your face, and wash your hands as soon as you’re done. Keep a glass of whole or low-fat milk nearby, too. Capsaicin won’t dissolve in water. You need some fat to neutralize it.

Burning hands and nose is something that I experienced during my Bell Pepper Dew Pickles. The first time around I picked over 2 kg peppers which take a while to clean and prep. Preparing the peppers with gloves my hands were on fire for at least two days. My hands looked normal but felt double the size with a slight red shine colour.
